This recipe makes a pitcher. (about 6-7 nice cocktails) Great to have on hand for a pool party or a simple afternoon conversation with friends.
3/4 cup loose packed fresh mint leaves
1 cup freshly squeezed lime juice
2/3 cups simple syrup*
1 1/2 cups rum**
3 cups club soda
Ice
*Simple syrup is equal parts granulated sugar and water. Mix and boil one minute. Store in refrigerator when not in use.
** Any rum would work. I would prefer pure sugar cane rum, such as 10 Cane Rum.
Rinse mint leaves with water and gently pat dry.
Add one layer of ice to the bottom of pitcher and muddle the leaves with a pestle or back of a large serving spoon. Muddling breaks the tender fibers of the mint leaves and allows the essential oils and that fantastic cool mint flavor to release.
Add more ice. You’ll want approximately 1/3 of the bottom of the pitcher full of ice. Add remaining ingredients. Stir and serve on the rocks. Garnish with a mint sprig and slice of lime.
